As the culinary tide flows into 2010, we can happily report that the latest in a LONG line of big name steakhouse launches is finally set to take place Wednesday night at the Perry South Beach on Miami Beach. Located just off the lobby of the mod Collins Avenue hotel, STK Miami aims to be the hipster’s culinary hangout with a catwalk across the back bar, a second tier dining loft and a private VIP room overlooking the lowly beefeaters below.

Next to the restaurant, a 2,000 square foot lounge called Coco De Ville hopes to capture the celebrity buzz of the multi-colored CDV in the basement of the STK restaurant in Los Angeles where Rihanna, a few Kardashians and a Tiger Woods mistress or two have been spotted. Perhaps the celebrity angle will help distinguish this latest in a series of big dollar South Beach sizzlers including Red, Meat Market, BLT Steak, Kobe Club and the ever-celeb-friendly Prime 112.

Executive Chef Todd Mark Miller’s trajectory from his Utah childhood to the mean streets of STK in New York is filled with star turns at Prime, the Four Seasons, Fresco, and Metropolitan. He received Restaurant Hospitality’s 2005 Rising Star Chef Award and, according to the STK website, has appeared on both FoodTV Network’s “Chopped” and NBC’s “The Today Show.” Miller’s Miami-inspired menu options will include Seared Big Eye Tuna with congri and Pork Mojo Cazuela with citrus chili maduros and yuca alongside STK’s New York and Los Angeles menu favorites like Shrimp Rice Krispies and Lil’ Big Macs.
